Celery. Celery. My queendom for a bunch of celery.
I was making potato salad to go with last night’s dinner – and horror of horrors – there was no celery in my fridge. How can that be, and more importantly, what can I use to bring flavor, color and crunch to my potato salad?
I needed inspiration and I needed it fast.
A quick check of the pantry and fridge produced tri-colored tortilla strips, finely shredded cheddar cheese, green onions and a bag of real bacon bits, which will punch up the taste and add crunch and color to my side dish.
While I sometimes don’t use eggs in potato salad (like this time), I always reach for olive oil mayo, which has become our new favorite, just like my “punched up” potato salad.
