What to make for dinner…what to make for dinner…needing some inspiration, I headed off to the grocery store, ready to stalk the aisles until an idea for tonight’s meal struck me like a lightning bolt.
While perusing the meat aisle, it didn’t take long before I saw boneless pork loin, priced at $5.71, with today’s sale date, and a $5.00 coupon on it. I’m a savvy shopper, remember, so how could I pass up a great deal like that? I couldn’t. Needless to say, the package made its way into my shopping cart pretty quick and I had a big smile thanks to Price Chopper.
Recently I purchased a non-stick-carbon wok and bamboo cooking utensils (at stir-fry & Beyond) to replace the IKEA wok and tools I’d pretty much worn out, and was more-than-anxious to christen them. My boneless pork loin bargain would be perfect for a stir fry.
My next port of call was the produce section to pick up a bag of broccoli slaw and a package of green onions. I already had the white rice needed to complete the meal at home.
Once back in the kitchen, I cut the pork into small (approx. 1/2”) squares, heated the wok and dropped the meat in, making sure to stir and turn it with the bamboo spatula until cooked. I then added the green onions (chopped), and the broccoli slaw, and gave the ingredients a good stir to mix everything together as they cooked. I topped the mixture off with a bottle of sweet-and-sour wok sauce to finish the stir fry part of the meal.
After cooking the white rice and draining it, I placed a circle of rice onto a dinner plate and added the pork and vegetables before serving. There you have it – Sweet-and-Sour Pork and Vegetable Stir Fry with Rice – a cheap, delicious and easy dinner. Bon appetit!
